Homemade Pancakes


1 egg

1 cup all-purpose flour

3/4 cup milk

2 tablespoons vegetable oil

1 tablespoon sugar

3 teaspoons baking powder

1/2 teaspoon of salt

About a 1/2 cup of minuture semi sweet chocolate chips (my add-in)

Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth.  For thinner pancakes, stir in additional 1/4 cup milk.  Grease heated griddle if necessary.  (To test griddle, sprinkle with a few drops of water.  If bubbles skitter around, heat is just right.)

Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.  Cook pancakes until puffed and dry around edges. Turn and cook other sides until glden brown. (to keep pancakes hot. stack on hot plate with paper towels in between.)  ABOUT NINE 4-INCH PANCAKES.

    So, who likes pancakes?

    Anyway, they sound really good. Maybe someone in your family would enjoy this recipe. We always have to double it if we all want some. Enjoy!
